Today's Food Holiday:
YUMM! National Zucchini Day! Since my grandpa is (basically) a farmer we have an overflowing amount of zucchini..so my family has lots of recipes featuring this vegetable. But here's my favorite (AND ITS HEALTHY...of course!)
1/2 c. applesauce
1 1/2 c. white sugar
2 t. vanilla extract
2 c. all purpose flour
1/2 c. unsweetened cocoa powder (this stuff does magic..in everything!)
1 1/2 t. baking soda
1 t. salt
2 c. shredded zucchini
Directions: (Makes 40 small brownies)
*Preheat oven to 350 degrees. Spray a 9 x 13 pan with nonstick spray.
*In a large bowl, mix together the applesauce, sugar, and vanilla until blended. In another bowl, combine the flour, cocoa, baking soda and salt.
*Stir the dry ingredients into the wet ingredients and fold in the zucchini.
*Spread onto the prepared pan.
*Bake for 25-30 minutes
